Holi Festival Food

Holi festive also known as festival of colors is celebrated in Spring. On the day of Holi, bonfires are lite at night to celebrate the victory of good over evil.

Every festival has a special food associated with that occasion. Growing up for me, it was eating boiled whole wheat sev (noodles) with ghee and sugar. The significance of whole wheat noodles is the coming harvest of wheat, even though these noodles will be made from previous harvest. Once new wheat comes to market, people clean and store it for the entire year, mainly in state of Gujarat. Wheat is coated in castor oil to keep it fresh. The wheat is then taken to mills as needed for flour.

During summer, I remember my mother and neighborhood aunties making noodles by hand from whole wheat flour dough. They will sit on a wooden chair especially made for making noodles. Imagine one side of sea-saw resting in place with other side up. The bottom has a rest where you can sit to make noodles.  In the top side there are ridges in the wood from where you will roll dough with your hands. Young children would sit on the floor to catch noodles and arrange it on a flat sieve (called chalani). These round jali shaped noodles are then dried in the sun (last picture). Dried noodles are stored in air tight container to use throughout the year. The art of making these noodles by hand is dying. Nowadays noodles are made by machines.

For eating, these noodles are simply boiled in water and serve with ghee and sugar. In the picture, along with noodles methi ni bhaji na gota (fenugreek greens fritters), cilantro chutneykathi chutney and Green Papaya Cachumber are served. These dishes are not necessarily associated with Holi festival, but gota, which is savory goes very well with sweet noodles. That was the menu for lunch on Holi this year.

The day after holi which is called Dhuleti, is celebrated with color. People color each other with color powder as well as colored water.  It turns into friendly competition to see who can color most without getting color on themselves. People’s white clothes and streets are covered in kaleidoscopic colors.

The special beverages associated with this day is thandai. It is a milk based beverage fortified with nuts, seeds and spices.

These cookies are inspired by thandai. The spices used in thandai are cardamom, black pepper, fennel seeds, saffron and white poppy seeds. The nuts used are almonds and pistachios. Seeds used are melon seeds instead I have used pumpkin seeds (papitas).

Thandai Cookies

Ingredients
  • 1 ½ cups all-purpose flour, divided
  • 1 ¼ cups sugar
  • 1 ½ cups (3 sticks) unsalted butter, soften
  • 2 large eggs
  • 1 cup almond flour
  • ½ cup pistachios
  • ½ cup pumpkin seeds (papitas)
  • 3 tablespoons poppy seeds
  • 2 teaspoons fennel seeds
  • 2 teaspoons ground black pepper
  • 3 teaspoons ground cardamom
  • 1 teaspoon saffron threads + 1 teaspoon of sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
Directions
  1. Toast pumpkin and fennel seeds in a pan, 1-2 minutes. Remove from a pan and let it cool for 10 minutes. In the same pan toast poppy seeds just for 30 seconds. Remove from a heat and let it cool for 10 minutes.
  2. Combine almond flour, one cup all-purpose flour, ¾ teaspoon each of salt and baking powder in a bowl. In a separate bowl, combine remaining all-purpose flour, salt and baking powder.
  3. Grind poppy seeds in spice grinder or in a mortar and pestle until ground but not forming a paste. Combine with almond flour mixture.
  4. Grind pumpkin seeds, fennel seeds and pistachio in food processor until finely ground but not forming a paste. Combine this with flour only mixture created in step 2.
  5. In a standalone mixer or hand held mixer beat butter and sugar until light and fluffy, 2 to 3 minutes. Add egg at a time and beat until well combined. Add cardamom, black pepper and beat until just combined.
  6. Remove about ⅓ of butter mixture and add to pistachio mixture. Combine with a spatula or hand mixer until it forms dough. If you wish to color the dough you can add green food color.
  7. Add almond flour mixture and beat until well combined. Remove about ½ mixture in emptied almond flour mixture bowl. If you wish to color the dough you can add food color of your choice.
  8. In a mortar and pestle (or with a rolling pin), grind saffron with 1 teaspoon of sugar. In the remaining dough in the mixer bowl, add saffron. Beat until saffron is well combined. If you wish to color the dough you can add orange food color.
  9. Cover three batches of dough separately in a plastic wrap and refrigerate for at least 2 hours.
  10. On an approximately 18 by 24-inch parchment paper, arrange 2 to 3 tablespoons of three different doughs in a random pattern. Cover with approximately 18 by 24-inch parchment paper and roll out the dough in a circle of ¼ inch thickness. Cut out cookies in a desired shape. Gather remaining dough after cut outs into a ball. From these make smaller balls with about 2 tablespoons of dough. Refrigerate cookies for at least an hour before baking.
  11. Alternately you can roll out three batches of dough into three to four 6 inches long and 1-inch-wide logs. Make a log by combining one of each color. Cut these logs into 6 equal portions. Twist each portions and formed into a ball. Refrigerate cookies for at least an hour before baking.
  12. Pre heat oven to 325 degrees. Bake cookies for 10 to 12 minutes. If you want crispy cookies bake for 15 to 16 minutes.
Notes
If you do not want to go through trouble of making separate batches of dough, just combine all flours after grinding. Once butter, sugar and eggs are beaten, add flour and beat to combine everything to make one dough. Refrigerate dough and cookies (cut outs or balls) similarly as above before baking.

Ladoo

Ladoos are made thoughout in India at home and also readily available in sweet shops. The round shaped sweet is called ladoo and there are many varieties of ladoo. Different types of ladoos are made depending on occasion and festival. This sweet is favorite of children. It can be eaten as a snack or with a meal as a sweet.

During month of August or September (on the fourth day of Bhadarva Sud in Hindu calendar) comes Ganesh Chaturthi. This year it was on September 2, 2019. Ganesh is the elephant-headed god of wisdom. The festival of Ganesh lasts for 10 days. His favorite food, ladoos, are made and offered to him as prasad. In the region of Maharashtra, special steamed ladoos called modaks are made with rice flour, coconut and jaggery. In Gujarat, ladoos are made with whole wheat flour and jaggery.

Many Indians keep fast during certain days. Sometimes on a day of fast, some people avoid eating regular meals or will eat only one meal and avoid eating food with salt after a meal. On those days to keep strength people may eat fruits, dry fruits and nuts. Whenever my mother had a fast, she used to make shing (peanuts) na ladoos on that day. These peanuts ladoos are quick and easy to make. The recipe can be adapted for other nuts.

Wheat Flour Ladoo

Ingredients
  • 2 cups ladoo (coarse whole wheat) flour, available in Indian grocery stores.
  • 1 tablespoon chickpea flour
  • 4 tablespoons canola oil
  • ½ cup or more warm water
  • 1 cup sugar or more or 1 ½ cups jaggery or more shredded with knife
  • 1 cup ghee (clarified butter) or more, melted and warm
  • 1 ½ teaspoons ground cardamom
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons toasted almonds, finely chopped
  • ¼ cup white poppy seeds, for garnish
  • Vegetable oil for frying
Directions
  1. Combine wheat flour, chickpea flour and canola oil in a large mixing bowl. Gradually add water and form into firm dough. Use more water if needed. Knead the dough until smooth. Divide the dough into 14 to 15 equal parts and form into balls. Take one ball into palm of your hand and make a fist with ball. Tightly press the dough with your hand and make oval shaped dough (muthia). Repeat with rest of the dough balls.
  2. Heat oil in a frying pan until hot enough to fry. Fry the muthia, 4 to 5 at a time until golden brown, 3 to 4 minutes. Transfer the muthia to a paper towel lined large mixing bowl to drain excess oil. Once all muthia are fried, remove the paper towel. Cover the bowl with a plate and let muthia cool down for 10 to 15 minutes.
  3. Break muthia into smaller pieces with your hands or with a wooden spoon. In a food processor, process small pieces until it resembles wet sand in 3 to 4 batches. Transfer to a big mixing bowl.
  4. Add sugar (skip if you are using jaggery), almonds, cardamom and nutmeg and mix well. Taste ladoo mixture and add more sugar if it is not sweet enough. Make a well in the center and add ¾ cup of ghee. If you are using jaggery, add jaggery in the ghee. With warm ghee, jaggery pieces will start to melt. With hands combine ladoo mixture with jaggery and ghee. Break unmelted pieces of jaggery with hand while mixing and taste ladoo mixture. Add more jaggery if it is not sweet enough.
  5. Take handful of mixture into hand and try to form a ball. If mixture does not stay together then add more ghee until the mixture stays firmly together. With a small ice cream scoop, scoop ladoo mixture and press firmly. Drop it on a plate and form a tight ball (ladoo) with your hands. Repeat the process until all mixture is used.
  6. In a pie dish or a small baking pan spread out poppy seeds. Drop a ladoo on poppy seeds and roll it gently between hands to evenly coat poppy seeds. Transfer to a serving plate. Repeat with remaining ladoo. Let ladoo stand for at least two hours to solidify ghee. It is served as a sweet on special occasions. (makes about 24 ladoo)

 

 

Shing na Ladoo

Ingredients
  • 1 cup dry roasted shing (peanuts)
  • ⅓ cup powdered sugar
  • 3 tablespoons ginger powder
  • ¼ cup or more ghee (clarified butter), melted
  • ½ teaspoon cardamom
Directions
  1. Ground peanuts in food processor until like a wet sand. Transfer to a mixing bowl.
  2. Add rest of ingredients to ground peanuts. Combine them with your hands. Take handful of mixture into hand and try to form a ball. If mixture does not stay together, add more ghee until the mixture stays firmly together. With a small ice cream scoop, scoop mixture and press firmly. Drop it on your hand and form a tight ball (ladoo) with your hands. Roll between your hands to make it smooth. Repeat the process until all mixture is used.
  3. Serve as a snack or sweet.

Chikki (Brittle)

The sun starts to move from south to north during December. It is believed that this northerly movement (uttarayana) begins on January 14 (Makar Sakranti). This day is celebrated with kite flying in Gujarat. People fly the kites from their terraces. The sky is filled with colorful kites and there is a international kite flying competition in city of Ahmedabad. Brittle called chikki, made with jaggery, sesame seeds and peanuts is eaten during this festival.
Ingredients
  • 1 cup sesame seeds (til), unhulled to make sesame seeds brittle or
  • 1 cup raw peanuts (shing), without skin to make peanuts brittle
  • ¾ cup jaggery, chopped
  • 1 tablespoon ghee or melted unsalted butter
Directions
  1. In a dry frying pan, roast sesame seeds or peanuts on medium heat until light golden brown, 5 to 6 minutes. (until sesame seeds starts popping). Remove from pan and set aside.
  2. Brush the same pan with ghee or butter. Also brush spatula and rolling pin. If you do not have silicon mat then brush approximately 10 x 12 inch area with ghee or butter on a stone surface.
  3. Heat jaggery on medium high heat until melted (it will be like caramel), 3-4 minutes. Keep heating jaggery until caramel is darker in color for 2-3 minutes, stirring constantly. Lower heat to low.
  4. Add sesame seeds or peanuts and stir quickly to combine with caramel. Transfer to silicon mat or brushed area. Roll out into ¼ inch thick approximatly 10 x 12 inch rectangle.
  5. Make cuts with a knife to make 2 x 2 square pieces. Let brittle cool down and once cooled, break the square pieces. Store in air tight container. Enjoy as a snack or a sweet.

Pav Bhaji

Pav (bread) Bhaji (mixed vegetables) is a street food available all over India. The bhaji should be soft and mashed which you can scoop up with a pav. This recipe uses small quantity of variety of vegetables which is great use of left over vegetables. You can also use left over mashed potatoes for this recipe.
Ingredients
  • Quarter of cabbage, shredded
  • 3 to 4 florets cauliflower, roughly chopped
  • 1 medium carrot, shredded
  • 1 Japanese eggplant or ½ of large eggplant, peeled and ½ inch diced
  • ½ dhoodhi (Indian squash), peeled, deseeded and ½ inch diced (optional)
  • 2 medium russet potatoes, boiled and mashed
  • 2 large red onions, finely diced (reserve ½ cup for serving)
  • 3 large Roma tomatoes, ¼ inch diced
  • 3 cloves garlic, minced
  • 4 tablespoons canola oil or butter
  • 1 teaspoon turmeric
  • 2 teaspoons chili powder
  • 1 teaspoon dhana-jeeru (spice blend of ground coriander and cumin)
  • ½ teaspoon garam masala
  • 1 ½ teaspoons salt or to taste
  • ¾ cup frozen peas, thawed
  • 2 teaspoons pav bhaji masala
  • ¼ cup chopped cilantro, for serving
  • 1 lime, cut into quarters for serving
  • 6 soft buns (pav), any kind
  • Butter for brushing on buns
Directions
  1. Combine cabbage, cauliflower, carrot, eggplant and doodhi in a large microwave safe bowl or large soup pot or Dutch oven. Cook vegetables in microwave (7 to 8 minutes) or stove top (10 to 12 minutes) until soft. Vegetables will release some liquid, keep that liquid. Mashed vegetables with potato masher and set aside. (You can use same soup pot or Dutch oven to make bhaji. You can transfer cooked and mashed vegetables to a mixing bowl).
  2. Heat oil or butter on a medium high heat in a large soup pot or a Dutch oven until oil is shimmering and butter is melted, 2 minutes. Lower heat to medium, add garlic and sauté it until fragrant, about 1 minute. Add onions and sauté them until translucent, 2 to 3 minutes. Next add all dry spices except pav bhaji masala and sauté with onions and garlic for 1 minute. Add tomatoes and sauté them until softened, 2 minutes.
  3. Add mashed potatoes and combine with sautéed vegetables. Let potatoes warm through before adding rest of mashed vegetables, for 2 to 3 minutes. Add rest of mashed vegetables, season with salt, stir and cover with a lid. Let bhaji cook for 7 to 10 minutes on low heat until flavors meld, stirring frequently. If bhaji is sticking to bottom, add some water. Uncover, add peas, pav bhaji masala and let bhaji cook for 5 to 6 minutes on low heat.
  4. Spread butter on buns and toast them on a griddle or frying pan until light golden brown but still soft.
  5. Serve hot bhaji with pav (buns). Garnish individual serving of bhaji with 1 tablespoons of cilantro. Serve reserved onion and lime on side.

Cachumber

Raw vegetables eaten with meal as a side dish is known as cachumber (salad).  It varies depending on season and availability of vegetables.

Everyday Cachumber

Ingredients
  • 2 Roma or plum tomatoes, thinly sliced
  • 1 red onion, thinly sliced
  • 2 serrano or jalapeno chilies, cut lengthwise into 4 pieces (optional)
  • ½ English cucumber, thinly sliced
  • 1 carrot, thinly sliced
  • 3 to 4 radishes, thinly sliced
  • 1 teaspoon chaat masala
  • Juice of ½ a lime
Directions
  1. Arrange slices of vegetables on a serving platter. Just before serving, sprinkle chaat masala and squeeze lime juice on vegetables evenly.

 

 

Kakdi Cachumber

Stir fired cucumber
Ingredients
  • 1 English cucumber, shredded
  • 1 jalapeno or serrano chili, cut lengthwise in 4 pieces
  • 7 to 8 curry leaves
  • 2 tablespoons olive oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon sesame seeds
  • ⅛ teaspoon asafetida
  • ¼ teaspoon turmeric
  • 1 tablespoon dalia (roasted and hulled split chickpeas) or roughly chopped peanuts
  • ½ teaspoon salt or to taste
  • Pinch of sugar
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons chopped cilantro
Directions
  1. Put shredded cucumber in a colander on top of bowl to catch drippings. Sprinkle ¼ teaspoon salt on cucumber and let it stand for 30 minutes. Squeeze out water from cucumber and transfer to a plate.
  2. Heat oil in a medium sauté pan on medium high heat until shimmering, 2 to 3 minutes. Add mustard seeds and let them sizzle. Add sesame seeds, asafetida and turmeric. Add chili, curry leaves and sauté for 30 to 40 seconds. Add dalia or peanuts and sauté for a minute.
  3. Add cucumber and sauté it for one minute. Season with salt, sugar and stir. Let cucumber cook for two more minutes. Off heat add lemon juice, cilantro and stir. Serve immediately as a side dish.

Tameta Dungli nu Cachumber

  • 2 Roma or plum tomatoes, ¼ inch diced
  • 1 red onion, ¼ inch diced
  • ¼ teaspoon salt or to taste
  • ⅛ teaspoon ground cumin
  • 1 teaspoon fresh lemon juice
  • Pinch of sugar
  • 1 tablespoon chopped cilantro
Directions
  1. Combine all ingredients in a serving bowl and serve immediately as a side dish.

 

 

Kachu Paku Cobis

  • 1 jalapeno or serrano chili, halved
  • 10 to 12 curry leaves
  • 2 tablespoons olive oil
  • 1 teaspoon mustard seeds
  • ⅛ teaspoon asafetida
  • ¼ teaspoon turmeric
  • ½ teaspoon dhana-jeeru (spice blend of ground coriander and cumin)
  • ½ teaspoon salt or to taste
  • 2 tablespoons chopped cilantro
Directions
  1. Heat oil in a medium sauté pan on medium high heat until shimmering, 2 to 3 minutes. Add mustard seeds and let them sizzle. Add asafetida and turmeric. Add chili, curry leaves and sauté for 30 to 40 seconds.
  2. Add cabbage and sauté it for 1 to 2 minutes. Season with salt and stir. Let cabbage cook for two more minutes. Add dhana-jeeru and let cabbage cook for a minute. Off heat add cilantro and stir. Serve immediately as a side dish.

 
Kacchi Keri Nu Cachumber

At beginning of spring season (vasant rutu), raw mangoes (kacchi keri) are available. When raw mangoes are available for few months, it is used in various ways, in making pickles, drinks and salad.
Ingredients
  • 1 small raw mango, seed removed, ¼ inch diced
  • 1 red onion, ¼ inch diced
  • ½ teaspoon salt or to taste
  • ⅛ teaspoon ground cumin
  • 1 teaspoon sugar or jaggery or to taste
Directions
  1. Combine ingredients in a serving bowl and serve immediately as side dish.
Notes
With young raw mango, you should be able to cut through seed. With a late season raw mango, you can cut around mango to remove seed.

 
Kacha Papaya nu Chhin

Where I grew up our house was surrounded by a garden. We had a couple of papaya trees and my mother used to make kacha (unripe) papaya nu chhin (shredded) frequently from papaya grown in our garden. This cachumber is also served with methi ni bhaji na gota (fenugreek green fritters), fafda (chickpea flour crisps), etc. When you buy gota or fafda from a street vendor or farsan (savory food) shop, you will also get this cachumber, especially in Gujarat.
Ingredients
  • Quarter of papaya, peeled, seeded and shredded
  • 1 jalapeno or serrano chili, halved
  • 10 to 12 curry leaves
  • 2 tablespoons olive oil
  • 1 teaspoon mustard seeds
  • ⅛ teaspoon asafetida
  • ¼ teaspoon turmeric
  • ½ teaspoon dhana-jeeru (spice blend of ground coriander and cumin)
  • ½ teaspoon salt or to taste
  • 2 tablespoons chopped cilantro
  • 1 tablespoon lime juice
Directions

  2. Add shredded papaya and sauté it for 1 to 2 minutes. Season with salt and stir. Let papaya cook for two more minutes. Add dhana-jeeru and let papaya cook for a minute. Off heat add cilantro, lime juice and stir. Serve immediately as a side dish or with methi na gota (fritters).

Dabeli is an Indian Street food available all over India. It is grab and go like food which people can eat as a breakfast, lunch or a snack in a hurry. It is basically a vegetarian slider, the patty is made out of mashed potatoes and spices.
Ingredients
  • 2 russet potatoes, boiled and mashed
  • 3 tablespoons canola oil
  • 1 small shallot, finely chopped
  • 2 tablespoons Dabeli masala, See note.
  • 1 teaspoon salt or to taste
  • 1 teaspoon sugar or to taste
  • 1 teaspoon lemon juice
  • 1 cup tamarind and date chutney, See note.
  • ½ cup salted or spicy peanuts, chopped finely
  • ¼ cup coconut, finely grated
  • ¼ cup pomegranate seeds
  • 12-15 black raisins, roughly chopped
  • 1 cup nylon sev (fine crunchy chickpea flour noodles), See note.
  • 2 tablespoons cilantro, finely chopped
  • ¼ cup garlic chutney, See note.
  • 2 tablespoons butter
  • 4 slider buns
Directions
  1. Heat oil in a frying pan on a medium high heat, 2 minutes. Add shallot and sauté it until translucent, 2 minutes. Add mashed potatoes and stir to combine with shallot. Add ½ cup of tamarind and date chutney, dabeli masala, salt, sugar and lemon juice. Stir to combine with masala. Let mixture cook for 2 to 3 minutes. If mixture is too dry, add some water.
  2. Transfer the mixture to a plate or a baking sheet and spread it in even layer. On top of mixture sprinkle peanuts, coconut, pomegranate seeds, raisins, half of sev and cilantro. Stir the mixture with your hands to combine everything. Divide the mixture into four equal parts and make small patties to fit into slider buns.
  3. Slit the buns without cutting through all the way. Spread about 1 tablespoon each of garlic chutney on one half and tamarind and date chutney on another half. Sprinkle about ½ tablespoon sev on both sides of patty and slide into bun. Press the bun tight to seal the patty. Repeat same process for remaining buns.
  4. Heat non-stick pan or a griddle on a medium heat and add butter. Once the butter is melted, toast the buns with patty on both sides by gently pressing, about 2 minutes per side.
Notes
The Dabeli masala, nylon sev, tamarind and date chutney, and garlic chutney are easily available in Indian grocery stores.

Baigan Bharta

Ingredients
  • 2 large eggplants (baigan)
  • 1 bunch scallions, thinly sliced
  • 2 medium Roma or plum tomatoes, ½ inch diced
  • 3 garlic cloves, finely chopped
  • 1 jalapeno or serrano chili, finely chopped
  • 3 tablespoons canola oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric
  • ½ teaspoon chili powder
  • 1 teaspoon dhana-jeeru (spice blend of ground coriander and cumin)
  • 1 teaspoon garam masala
  • 1 teaspoon salt or taste
  • ¼ cup regular yogurt (optional)
  • 3 tablespoons chopped cilantro, for garnish
Directions
  1. Pre-heat oven to 400 degrees. Line a large baking pan with parchment paper or aluminum foil sprayed with non-stick spray.
  2. Wash and cut eggplants in half. Arrange them on baking pan cut side down, leaving some space in between. Roast the eggplants until tender, about 30 to 35 minutes.
  3. Let eggplants cool for few minutes. Scoop out the pulp from eggplants, discarding the seeds. Cut the pulp in small pieces or mash with a potato masher.
  4. Heat oil in a frying pan or a wok until shimmering, 2 to 3 minutes. Add cumin seeds and let it sizzle. Add garlic and sauté it until light golden brown, 2 minutes. Add scallions, green chili, all dry spices and sauté them for 2 to 3 minutes. Next add tomato and sauté until the mixture is almost dry, 2 to 3 minutes.
  5. Add eggplant pulp, season with salt and stir everything. Cover the pan or wok and let eggplant cook for 7 to 10 minutes to blend all the flavors, stirring occasinally. If you want to add yogurt, add at this point, and let it warm through with eggplant for a minute.
  6. Garnish with cilantro and serve warm with Nan or Paratha. Can also be served as a dip.

Samosa

Samosas have become quite popular in many countries with Indian population. This delicious snack is sold on streets all over India. In US it's available freshly made and frozen in most Indian grocery stores. My cousin, Vibha, runs a catering business in India and this is her recipe. While making samosa at home, you do not need to finely mash potatoes for filling and the filling can be made in advance.
Ingredients
For dough:
  • 2 cups all-purpose flour
  • 1 tablespoon vegetable shortening
  • 2 tablespoons canola oil
  • 1 teaspoon salt or to taste
  • 1 teaspoon ajwain seeds
  • Water as needed
For filling:
  • 2 russet potatoes, boiled and mashed
  • 2 tablespoons canola oil, plus more for frying
  • ½ teaspoon brown mustard seeds
  • ½ teaspoon cumin seeds
  • ½ teaspoon ajwain seeds
  • ½ teaspoon fennel seeds
  • 1 jalapeno or serrano chili, finely minced
  • 1 inch piece of ginger, finely minced
  • ½ teaspoon garam masala
  • ½ teaspoon sanchar (black salt)
  • ½ teaspoon chaat masala or juice of ½ a lemon
  • ½ cup frozen green peas, thawed
  • ¼ cup cilantro, finely chopped
  • Salt
Directions
  1. Make the dough: Combine flour, salt, ajwain seeds, oil and shortening in a medium mixing bowl and mix it with hands. Gradually add water while mixing and kneading until it makes soft and smooth dough. Cover the dough with a plate or a kitchen towel and let it rest for 30 minutes to one hour.
  2. Make the filling: In a wok or a frying pan heat 2 tablespoons of oil on medium high heat until simmering. Add all the seeds and let them sizzle. Add green chili, ginger and sauté them for 30 seconds. Add mashed potatoes, garam masala, chaat masala or lemon juice and black salt. Stir everything to combine spices with mashed potatoes. Let the mixture cook on low heat for 2 minutes.
  3. Add peas and cilantro. Stir to combine and let the filling cook for 1 more minute. Taste the filling for salt as black salt and chaat masala are quite salty. Add salt if needed. Let the filling cool for 20 to 30 minutes.
  4. Make samosas: Divide the dough into 20 or so equal parts. Roll into balls and cover with a plate or a towel. Take one ball of dough and roll out into about 6 inch circle. Cut the circle in half. Put about 2 tablespoons of filling in the middle of half circle, leaving about ¼ inch space on the round side. Pick corner of flat side and cover the filling. Pick another corner of flat side and cover the dough with filling. Press gently to seal dough over the filling. It should make a triangle. Pinch together round side of dough and the corner. Cover the prepared samosa with a towel. Repeat the process with remaining dough balls and filling.
  5. Heat oil in frying pan until ready for frying. Drop 4 to 5 samosa in hot oil and fry until golden brown, about 3 to 4 minutes. Remove from oil and drain excess oil on a paper towel lined plate.
  6. Fry remaining samosa same way. Serve warm with cilantro chutney and tamarind and date chutney.

During Diwali festival, variety of snacks including cookies are made to share with family, neighbors and guests. I developed this recipe during that time.
Ingredients
  • 2 ½ cups AP flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons tea masala
  • 1 teaspoon ground cardamom
  • 1 ½ cups granulated sugar
  • ½ cup (1 stick) unsalted soften butter
  • 1 large egg or ¼ cup heavy cream
  • ½ cup candied ginger, roughly chopped in bite size pieces
Directions
  1. Pre heat oven to 375 degrees.
  2. Combine flour, baking powder, salt, tea masala and cardamom in a large mixing bowl. Set aside.
  3. In a bowl of stand mixture, beat butter and sugar until light and fluffy, about 1 minute. Add an egg or heavy cream and beat for 30 seconds or until combined. Scrap sides of bowl to combine everything.
  4. Add flour and beat to combine on low speed for 30 seconds or until flour is just combined. Remove the bowl.
  5. Add candied ginger and stir to combine with dough.
  6. Using a small ice cream scoop, drop cookies on parchment paper lined cookie sheet, leaving 2 inches of space in between.
  7. Bake for 9 to 10 minutes or until edges are turning light golden brown.

Dried green peas soup with crispy thin chick pea flour noodles
Ingredients
  • 1 ½ cups dried green pea
  • 2 jalapeno or serrano chilies, finely minced
  • 1 ½ inch piece of ginger, finely minced
  • 2 sprigs of mint
  • 1 teaspoon turmeric
  • 1 teaspoon dhana-jeeru (spice blend of ground coriander and cumin)
  • 2 teaspoons salt or to taste
  • Small (golf ball size) piece of jaggary or 3 teaspoons sugar (optional)
  • Juice of one lemon
  • 3 tablespoons chopped cilantro, for garnish
  • 1 cup thin sev (crispy chickpea flour noodles), for serving, See Note.
  • ½ cup tamarind-date chutney, for serving
  • ½ cup cilantro chutney, for serving
  • Water as needed
  • For Vaghar (tempering):
  • 3 tablespoons olive or canola oil
  • 1 teaspoon cumin seeds
  • ½ teaspoon mustard seeds
  • 1 medium sized red onion, finely diced (reserve half for serving)
  • 3 garlic cloves, finely minced
  • ½ teaspoon garam masala
  • ¼ teaspoon chili powder
Directions
  1. Pick through peas to remove any impurities and soak them in 3 cups of water for 6 to 8 hours or overnight.
  2. Remove excess water to keep just enough water to cover peas. Cook in a medium sized Dutch oven or soup pot with cover until peas are tender, about 45 minutes.
  3. Uncover, add mint sprigs, green chilies, ginger, turmeric, dhana-jeeru, salt and jiggery or sugar. Let it simmer while you prepare vaghar.
  4. Prepare Vaghar: In a small heavy bottomed pot, heat oil until shimmers. Add cumin and mustard seeds and let them sizzle. Add garlic and sauté it for 30 seconds. Add half of chopped onion, garam masala, and chili powder and sauté them until onion is light golden brown. Pour over simmering peas (usal). Stir the peas to blend spices.
  5. Let peas simmer for 10-12 minutes. Add lemon juice and let it simmer for 5 more minutes. If usal is too thick add some water. Remove mint sprigs. Garnish with cilantro.
  6. To cook usal in Instant Pot: Follow step 1. You can omit soaking pea but it will speed up cooking process. Set instant pot to sauté setting for 30 minutes. Once hot, heat oil until shimmers. Add cumin and mustard seeds and let them sizzle. Add garlic and sauté it for 30 seconds. Add half of chopped onion, garam masala, and chili powder and sauté them until onion is light golden brown. Drain peas and add them to pot and cover with water. Add mint sprigs, green chilies, ginger, turmeric, dhana-jeeru, and salt. Set instant pot to pressure cook and set time for 30 minutes. For unsoaked peas increase time to 50 minutes. Once peas are cooked, release steam, uncover and set to sauté setting for 15 minutes. Remove mint sprigs, and add jiggery or sugar and lemon juice. Let peas simmer for 5 to 7 minutes.
  7. To serve: Pour hot usal in a soup bowl, spread about ¼ cup of sev on top. Top with tamarind-date chutney and cilantro chutney. Garnish with about teaspoon of chopped red onion. Usal can be served as an appetizer or lunch as a soup.

Thin sev is readily available in Indian grocery stores.

Rice Pudding

Ingredients
  • 2 cups whole milk (doodh)
  • 2 cups half and half
  • ½ cup uncooked basmati rice
  • 1 tablespoon ghee (optional)
  • ½ cup sugar or more
  • ⅛ teaspoon saffron (kesar) threads
  • ½ teaspoon ground cardamom (elaichi)
  • ¼ teaspoon ground nutmeg (jaifal)
  • 2 tablespoons slivered almonds (badam), for garnish
Directions
  1. Rinse rice with water until water is clear. Let excess water drain and combine with ghee if using in a small mixing bowl. Set aside.
  2. In a small mixing bowl combine saffron with 1 tablespoon of milk and set it aside to dissolve.
  3. Combine milk and half and half in a large non-stick pot or a Dutch oven and bring to a boil on medium heat, 8 to 10 minutes. Lower the heat and let milk simmer for 10 minutes. Stir in between so that milk does not boil over.
  4. Change heat to medium. Add rice and immediately stir to keep rice kernels separate. Let rice cook until tender, 15 to 20 minutes, stirring in between.
  5. Add sugar, saffron milk and let doodh pak simmer for 10 minutes or so to let sugar dissolved and the liquid from sugar to evaporate, stirring frequently. Add more sugar if needed.
  6. Off heat add cardamom, nutmeg and mix. Garnish with almonds and before serving. Can be served warm or chilled with Puri.

  • ½ cup sweetened condensed milk
  • 1 to 2 teaspoons sugar, if needed
  • 1 teaspoon ground cardamom
  • 1 tablespoon slivered almonds, for garnish
  • 1 tablespoon unsalted pistachios, finely chopped, for garnish
Directions
  1. Rinse rice with water until water is clear. Let excess water drain and set aside.
  2. In a non-stick medium pot or a Dutch oven bring milk to a boil on medium heat, 7 to 8 minutes. Stir in between so that milk does not boil over.
  3. Add rice and immediately stir to keep rice kernels separate. Let rice cook until tender, 15 to 20 minutes, stirring in between.
  4. Once rice is cooked add condensed milk and let kheer cook for 10 more minutes to make it creamy, stirring frequently.
  5. Add more sugar if needed. Off heat add cardamom and mix. Garnish with almonds and pistachio before serving. Can be served warm or chilled.

  • About 1 lb. paneer, cut into ¾ inch dice
  • 1 tablespoon chopped cilantro, for garnish
For Marinade:
  • 1 tablespoon canola oil
  • ½ teaspoon garam masala
  • ½ teaspoon ground cumin
  • 2 teaspoons garlic-ginger paste
  • 1 teaspoon kasuri methi (dry fenugreek leaves)
  • 1 teaspoon salt
For Gravy:
  • 3 tablespoons canola oil or butter or coconut oil
  • 2 teaspoons garlic-ginger paste
  • ½ teaspoon ground cumin
  • ½ teaspoon garam masala
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder
  • 1 8 oz. can tomato sauce
  • 1 tablespoon kasuri methi (dry fenugreek leaves)
  • 1 teaspoon sugar or to taste
  • 1 teaspoon salt or to taste
  • ½ cup heavy cream
Directions
  1. Pre-heat oven to 400 degrees.
  2. Combine ingredients of marinade into a medium mixing bowl. Add paneer and toss to coat with marinade. Cover with plastic wrap and let it marinate for 30 minutes to an hour.
  3. Line a baking sheet with aluminum foil and spray with non-stick cooking spray. Spread paneer evenly on sheet and bake until light golden brown, 10 to 15 minutes.
  4. Heat oil or butter in a wok or a frying pan until simmering. Sauté garlic-ginger paste with spices until fragrant, 2 minutes. Add tomato sauce, kasuri methi and stir to combine everything. Season with salt and sugar. Let it cook for 2 to 3 minutes.
  5. Add the baked paneer and stir with the gravy. Adjust the seasoning and let paneer cook with gravy for 5 minutes, stirring occasionally so that gravy does not stick to bottom. Add heavy cream, stir and let the gravy cook for another 2 minutes.
  6. Garnish with cilantro and serve warm with Nan or Paratha.

  • ½ teaspoon garam masala

  • 1 garlic clove, minced
  • 1 teaspoon kasuri methi (dry fenugreek leaves)
  • 1 teaspoon salt
For Gravy:
  • 3 tablespoons canola oil or butter or coconut oil
  • 1 small shallot, finely minced
  • 1 jalapeno or serrano pepper, finely minced
  • 2 inch piece of ginger, minced
  • 1 clove of garlic, minced
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon garam masala
  • ½ teaspoon turmeric
  • 1 teaspoon chili powder
  • ½ teaspoon ginger powder
  • ½ teaspoon ground black pepper
  • 3 tablespoons tomato paste
  • ¾ cup butternut squash or pumpkin puree
  • 1 tablespoon kasuri methi (dry fenugreek leaves)
  • 1 teaspoon salt or to taste
  • Juice of ½ a lime or lemon
  • ½ cup heavy cream
Directions
  1. Pre-heat oven to 400 degrees.

  5. Add the baked paneer and stir with the gravy. Adjust the seasoning and let paneer cook with gravy for 5 minutes, stirring occasionally so that gravy does not stick to bottom. Add heavy cream, stir and let the gravy and paneer cook for another 2 minutes.
  6. Garnish with cilantro and serve warm with Nan or Paratha.

 
Tofu Tikka Masala

Ingredients
  • 1 packet extra firm tofu
  • 2 tablespoons canola or coconut oil
  • 1 tablespoon chopped cilantro, for garnish
For Marinade:
  • 1 tablespoon canola oil
  • ½ teaspoon garam masala
  • ½ teaspoon ground cumin
  • 1 teaspoon minced ginger
  • 1 garlic clove, minced
  • 1 teaspoon kasuri methi (dry fenugreek leaves)
  • 1 teaspoon salt
For gravy:
  • 1 8 oz. can of tomato sauce
  • 1 tablespoon almond or cashew butter
  • 2 teaspoons corn starch
  • 1 medium shallot, roughly chopped
  • 1 medium tomato, roughly chopped
  • 2 inch piece of ginger, peeled and roughly chopped
  • 1 Jalapeno or serrano pepper, roughly chopped
  • 2 cloves garlic
  • 2 tablespoons canola or coconut oil
  • 1 teaspoon turmeric
  • ½ teaspoon chili powder
  • 1 teaspoon garam masala
  • ½ teaspoon ground cumin
  • ½ cup almond or any nut milk
  • 1 tablespoon kasoori methi (dry fenugreek leaves)
  • 1 teaspoon salt or to taste
  • 1 teaspoon raw sugar or ½ teaspoon honey
Directions
  1. Cut tofu into ½ inch slices. Drain the liquid of the tofu by putting it between two baking sheets covered with paper towels and weighing it down with cans or a heavy pan. Then cut into ½ inch dice. Combine marinade ingredients and diced tofu in a medium mixing bowl. Let it stand for 30 minutes to an hour.
  2. Combine tomato sauce, almond butter, almond milk, corn starch, shallot, tomato, ginger, jalapeno and garlic in a blender bowl. Blend all the ingredients until smooth sauce. Set it aside.
  3. Heat 2 tablespoons oil in a wok or a wide heavy bottomed pan. Stir fry tofu, until golden brown, 4 to 5 minutes. Remove from a wok or a pan with a slotted spoon on a paper towel lined plate to remove excess oil. Keep the extra oil in wok or pan.
  4. Heat 2 tablespoons oil in same wok or pan until simmering. Add tomato sauce mixture and stir to combine with oil. Add spices, kasuri methi, and season with salt. Stir to combine everything. Let the gravy cook for 2-3 minutes. Add stir fried tofu and stir to combine with gravy. Cover the pot and let gravy and tofu cook for 10-12 minutes, stirring occasionally. If gravy is too thick add some water.
  5. Garnish with cilantro and serve with vegan flat bread or rice.
Notes
To make this recipe nut less, replace nut butter and milk with ½ cup silken tofu.
